Using an electric mixer fitted with the paddle attachment, add the peanut butter, sugar, vanilla and eggs. Mix until well combined. The consistency might be a bit mealy.
Spoon approximately one tablespoon of dough onto an baking pan lined with parchment paper. If the dough is mealy, use the warmth of your hands to form into balls and flatten (if necessary moisten your hands with a little water) into round cookies. Space them approximately one inch apart.
Gently press six or more peanuts into the top of each cookie.
Bake until golden brown around the edges, ten minutes, plus or minus.
Remove from the oven and cool on wire racks. Serve with a cold glass of milk or a hot cup of coffee! They’re delicious!! Enjoy!!!
