Instructions
  1. In the bowl of an electric mixer using the dough hook (or a bread machine on dough cycle or an electric food processor...), combine the water, cane sugar, yeast, salt, all purpose flour and buttter.
  2. Mix on a low to medium speed for a few minutes until the dough is smooth. Place the dough into a large bowl and cover with a warm damp cloth. Allow the dough to rise for approximately one hour.
  3. Bring the water with baking soda to a boil. Preheat the oven to 425 degrees F. Prepare a pan with parchment paper.
  4. Remove the dough from the bowl and divide into six or eight equal pieces. Then take one of the pieces of dough and roll it into a long rope. Form a pretzel. Repeat This step with each piece of dough. You can also cut the rope into small bit size pieces if you prefer. I often make the bite size pretzels when I'm entertaining.
  5. Using a stainless steel skimmer or spatula gently lower the pretzels into the pot of boiling baking soda water. Allow them to boil for 45 seconds and then remove and place on the parchment paper. Sprinkle with coarse kosher salt.
  6. Bake at 425 degrees F for approximately 12 minutes or until dark golden brown.
  7. Note: my kids prefer equal parts honey and butter mixed together for a dipping sauce to the jalapeno cheese sauce that i love.
Jalapeno Cheddar sauce
  1. Note: I usually make this sauce while the pretzels are baking. In a medium sauce pan, melt the butter and stir in the diced jalapenos. Whisk in the flour and cook for two minutes over medium heat, whisking constantly.
  2. Pour the milk in slowly while continuing to whisk. Simmer until it thickens and then stir in the cheddar. Salt to taste and serve hot! Enjoy!!

  2. Hot dogs wrapped in pretzel dough!! They're delicious!! Boil in baking soda water after wrapping the dough around the pretzel and bake at 425 degrees F for 12+ minutes. Great for a luncheon with kids...

Simple Pasta Sauce

This is a very simple, yet delicious, recipe. In the early spring, just after the fear of frost had ended, we planted tomato plants in our garden. For months we watched them grow, and then today we harvested the vine ripened tomatoes. We filled baskets with many different varieties. Instructions
  1. Preheat the oven to 250 degrees F.
  2. Place the popped popcorn in a very large bowl.
  3. Lightly butter two baking sheets
  4. In a medium sauce pan on medium heat, combine the butter, sugar, heavy cream, and salt. Bring to a boil stirring constantly. Boil for approximately five minutes, stirring occasionally, making sure not to burn the sugar. Then stir in the baking soda.
  5. Pour the caramelized sugar over the popcorn and toss to distribute evenly. Place popcorn on the buttered baking sheets and sprinkle the pecans on top. Place in the oven and bake for thirty minutes. Stir the popcorn every ten minutes while baking.
  6. Remove from the oven, let the popcorn cool and break into pieces. If you would like a little spice, sprinkle to taste with cayenne pepper. Enjoy!!
