Peanut Cookies
- 18 ounces organic creamy peanut butter
- 1 cup organic cane sugar
- 1 tsp organic vanilla extract
- 2 organic eggs lightly beaten
- 1/2 cup salted Virginia peanuts
- Preheat the oven to 350 degrees F
- Using an electric mixer fitted with the paddle attachment, add the peanut butter, sugar, vanilla and eggs. Mix until well combined. The consistency might be a bit mealy.
- Spoon approximately one tablespoon of dough onto an baking pan lined with parchment paper. If the dough is mealy, use the warmth of your hands to form into balls and flatten (if necessary moisten your hands with a little water) into round cookies. Space them approximately one inch apart.
- Gently press six or more peanuts into the top of each cookie.
- Bake until golden brown around the edges, ten minutes, plus or minus.
- Remove from the oven and cool on wire racks. Serve with a cold glass of milk or a hot cup of coffee! They're delicious!! Enjoy!!!
Lilies of the Valley
The sweet smell of Lily of the Valley fills the air as I sit on my porch and begin to write this post,. Each year our lilies grow stronger and more abundant. The new additions appear to stand alone in the patch, but just beneath the surface lies a network of roots connecting all of the delicate flowers. The Lilies are much like my amazing extended family as we are growing in number each year, and we go about our daily lives independent of one another. But beneath the surface we are connected by incredibly strong roots anchored in love.
