Lemon Herb Rotisserie Chicken Salad
I’ll never forget the first time I tasted my friend Emme’s chicken salad. It was soooo delicious! I went home and tried to recreate it… This is my version of her chicken salad. Hope you enjoy it!!
Ingredients
- 2 Rotisserie Chickens
- 2 lemons juiced
- 1/2 cup fresh parsley
- 1/2 cup fresh dill
- 1/2 cup fresh basil
- 1/2 cup mayonnaise
- 3 cloves garlic
- 1 cup kalamata olives
- 1 red bell pepper chopped into small pieces
- 1 cup celery chopped into small pieces
- salt
- pepper
- 1 lemon cut into wedges
- 1 tbsp fresh parsley for a garnish
- a few fresh basil leaves as a garnish

Instructions
- In a food processor add the parsley, dill, basil, garlic, juice of two lemons, mayonnaise, salt and pepper. Process the dressing until it is well blended.
- In a large bowl, add bite sized pieces of the rotisserie chicken. Then add the celery, bell peppers and olives.
- Pour the dressing over the chicken, celery, peppers and olives and mix until evenly distributed. Garnish with fresh parsley and salt and pepper to taste.
- Serve on a toasted bun or on top of fresh greens and place a fresh wedge of lemon to squeeze over the chicken salad just before serving. It's delicious! Enjoy!
