Peanut Cookies
- 18 ounces organic creamy peanut butter
- 1 cup organic cane sugar
- 1 tsp organic vanilla extract
- 2 organic eggs lightly beaten
- 1/2 cup salted Virginia peanuts
- Preheat the oven to 350 degrees F
- Using an electric mixer fitted with the paddle attachment, add the peanut butter, sugar, vanilla and eggs. Mix until well combined. The consistency might be a bit mealy.
- Spoon approximately one tablespoon of dough onto an baking pan lined with parchment paper. If the dough is mealy, use the warmth of your hands to form into balls and flatten (if necessary moisten your hands with a little water) into round cookies. Space them approximately one inch apart.
- Gently press six or more peanuts into the top of each cookie.
- Bake until golden brown around the edges, ten minutes, plus or minus.
- Remove from the oven and cool on wire racks. Serve with a cold glass of milk or a hot cup of coffee! They're delicious!! Enjoy!!!
Lilies of the Valley
The sweet smell of Lily of the Valley fills the air as I sit on my porch and begin to write this post,. Â Each year our lilies grow stronger and more abundant. Â The new additions appear to stand alone in the patch, but just beneath the surface lies a network of roots connecting all of the delicate flowers. Â The Lilies are much like my amazing extended family as we are growing in number each year, and we go about our daily lives independent of one another. Â But beneath the surface we are connected by incredibly strong roots anchored in love.

We had a little family pizza party! Â I’m going to upload my recipe for bell pepper, onion, tomato and goat cheese pizza (pictured above). Â It’s so delicious!

Making a simple and healthy chicken noodle soup with homemade noodles. Â This is a great way to use the left over chicken from the roast, if you have any leftovers.
Dinner is served! Our kitchen table with fresh cut dogwood branches for a centerpiece.
Broccoli Quiche
- 1 pie crust unbaked
- 3.5 cups frozen broccoli thawed
- 1 cup red onions sliced thin
- 2 cups swiss and gruyere shredded
- 5 eggs
- 3/4 cup heavy cream
- 1/2 cup whole milk
- salt
- black pepper
- 2 tbsp olive oil
- Preheat the oven to 425 degrees F. Place the pie crust into a glass pie pan and bake for ten minutes. I love to use the best quality ingredients I can find, so I often make my own crusts. However, trader Joe's has an excellent butter crust in their frozen section. It's absolutely delicious and a huge time saver. That's what I used today.
- Remove the pie crust from the oven and reduce the heat to 325 degrees F.
- Sprinkle one cup of the shredded swiss and gruyere cheese mixture evenly on top of the crust.
- Add the broccoli.
- In a saute pan on the stove top, heat the two tablespoons of olive oil and the onions with a pinch of salt, saute the onions until translucent.
- Spread the onions evenly on top of the broccoli.
- In medium size mixing bowl, whisk the eggs, cream and milk and add a pinch of salt and pepper.
- Sprinkle the remaining cup of cheese over the broccoli and onions...
- Pour the whisked egg, cream and milk mixture evenly over the broccoli.
- Place in the oven at 325 degrees F and bake for one hour and twenty minutes or until cooked through. If the top starts to brown, cover with aluminum foil.
- Remove from the oven. Serve and enjoy!
